It doesn’t get any easier than this chewy meringue cookies recipe! All you need are 5 ingredients – egg whites, sugar, salt, cream of tartar, and vanilla. I’ve sprinkled a tiny bit of chopped nuts on top but this is completely optional.
You bake them for about an hour at a very low temperature. Then, you leave them in the oven for another two hours to cool down. Don’t open the door!

How the kids can help
Kids love using the electric beater so if you think your child is old enough to hold it, this is a fun step for them to do. You may want to hold the bowl to guide them so it doesn’t make a mess.
Older kids can help pipe the chewy meringue cookies mixture onto the cookie sheet. It’s important that you have a uniform size so that they cook evenly so it may be tricky for a younger child to do this step.
Tips for making chewy meringue cookies
- It’s very important to start with a completely dry bowl. Make sure that there is no moisture or grease in it at all.
- You will only work with the egg whites so make sure you separate them carefully as the yolks will ruin the recipe.
- Don’t add the sugar until the egg whites are frothy. This helps with consistency.
- Beat the whites until you have stiff peaks. To check, I hold the bowl upside down and make sure that none slides out.
- You will need to bake them all at once not in batches so only make as many as you can cook.
Can you add flavoring to meringue?
Yes, you definitely can. Vanilla is traditional. But, you can also add peppermint, almond, coconut, or even lemon. Experiment to find the one that you like the best.
How do you know when they are done?
When making chewy meringue cookies, they should be light and fluffy and easy to remove from the baking sheet. If they aren’t, cook them for a bit longer and check again.
How to store meringue cookies
Keep them in an airtight container at room temperature for up to two weeks. These cookies cannot be frozen.
